What we make

One product. Compounded asafoetida powder, which a Kerala kitchen calls kayam, in 50 g and 100 g bottles. We buy resin and mill it ourselves. We are not a trading house that buys finished powder and puts a label on it.

Four ingredients, all four on the label

Asafoetida resin on its own is too strong and too hard to cook with. Nobody sells it that way for kitchen use. So it gets compounded: the resin is cut with edible carriers and milled into a powder you can measure with a spoon.

Ours is gum arabic, refined wheat flour, edible oil and asafoetida. That is the whole list. The wheat flour is why this is not gluten‑free, and we would rather you read that here than find it on the back of the bottle.

    Binds the blend so it stays a powder and not a cake.

  • Refined wheat flour

    The carrier. Also the reason for the wheat allergen.

  • Edible oil

    Keeps the powder loose and the aroma in.

Using it. A pinch into hot oil at the start, with the mustard seeds. That is enough for a pot of sambar or a kilo of dal. If you find yourself adding spoonfuls, the kayam is weak, whoever made it.

What is not in it

Hing is one of the easier spices to cheat with. Chalk, soapstone and cheaper foreign resins all get mixed into it, and once it is a powder in a bottle you cannot tell by looking. So it is worth knowing what is not allowed anywhere near it.

None of that can go into compounded asafoetida sold in India. The rule is sub‑regulation 2.9.29 of the Food Safety and Standards regulations, and holding an FSSAI licence means being bound by it. Ours is number 21325198000442.

Where the resin comes from

Ferula does not grow commercially in India. Every gram of hing in this country arrives from somewhere else, whatever the label says. Ours is imported directly from Tajikistan, Uzbekistan and Kazakhstan.

Buying the resin ourselves instead of buying finished powder is the whole reason we can talk about what goes into the bottle. It is also the part of this business most likely to go wrong, which is why it gets checked before anything is mixed.

Your label on our kayam

We hold three things a brand needs before it can legally put a bottle of hing on a shelf: an FSSAI licence, a GST registration, and a Legal Metrology packing licence. That last one is what allows a pack to carry an MRP and a net-quantity declaration. It is the licence most people only discover they need once their artwork is already printed.

What is compounded asafoetida?

Asafoetida resin on its own is too strong and too hard to use straight. Compounded asafoetida is that resin blended with edible carriers, in our case gum arabic, refined wheat flour and edible oil, then milled to a powder you can actually cook with. Nearly all hing and kayam sold in Indian kitchens is compounded. The standard it has to meet is FSS Regulation 2.9.29.

Is kayam the same as hing and asafoetida?

Yes. Kayam is the Malayalam name, perungayam or perumkayam the Tamil, hing the Hindi, asafoetida the English. Same spice. We make it as compounded kayam powder in 50 g and 100 g bottles.

Where does the raw material come from?

Ferula is not grown commercially in India, so every gram of hing here is imported. Ours comes in from Tajikistan, Uzbekistan, Kazakhstan.

Do you do private label and repacking?

Does the bottle contain wheat?

Yes. Refined wheat flour is one of the four ingredients, so the product is not gluten-free. It is vegetarian — the green mark is on every pack.
